Will somebody please explain how scraping and library works to me?

I have a shared library though a Mysql database. But even though a new movie will show up on every system when I get a new movie, they are inconsistent as far as information and artwork. I notice that when XBMC scans the movie into the library, it does not create a .nfo or thumb or any other file in the movie folder. But it still shows up in the library with the information and thumb. If I choose "reload" it does not ask "Ignore local information..." So where is the information being stored if not locally in the folder (where I thought it was supposed to be stored) and why do I have to "reload" each movie on each machine to get them all to have the same info?

If I use an external scraper like "media companion" or "Couchpotato", it will create a .nfo in the folder but then I still have to "reload" and choose NOT to ignore the local information on each system. I don't get it.

The "share" is set up correctly because "resume" and "watched" status updates between systems, just not the movie info. or thumbs. Can anybody tell me why this is? I'm confused.

Oh... and is there a way to "reload" all of the movies from the local information? If I use a scraper program, I still have to go in and choose "reload" on each movie one by one... Any way to just do a batch "reload" and have it grab the local info?
